Ovine (sheep) liver as opposed to bovine (cow) is higher in iron, manganese, and essential fatty acids. In general liver is a superfood being a superb source of B vitamins (especially B12, folate, and choline), retinol (the active form of Vitamin A), zinc and magnesium, essential fatty acids, vitamin K2, CoQ10, etc. It is about as close as you can get to a 100% multivitamin/mineral without the synthetic, factory manufactured multi vitamins and minerals.
